After being planted, coffee trees take 3-4 years to begin bearing fruit in the form of coffee cherries. Coffee cherries are harvested in one of two ways: strip picked, where all cherries are removed from the branch at once, or selectively picked, where only ripe cherries are individually picked by hand. There are two primary processing methods: dry processing, where fresh cherries are dried in the sun, and wet processing, where cherries are pulped to remove the skin and pulp.
