Late 16th century. Borrowed from Late Middle French abricots, plural of abricot, from Spanish albaricoque, from Arabic اَلْبَرْقُوق (al-barqūq), from Ancient Greek πραικόκιον (praikókion), from Latin praecoqua. At the time of the borrowing, the French plural-s was still pronounced (at least in pausal position), hence the form abrikoos.
