From Spanish don Quixote (literally Lord Quixote). The French ‹ch› spelling represents the older pronunciation of the Spanish ‹x› spelling, which was /ʃ/ rather than the modern /x/. Compare Portuguese Dom Quixote and Italian Don Chisciotte, whose spelling also reflects the older pronunciation.
