Did your dream childhood snacks revolve around the freezer? Mine did! And the obsession with Bagel Bites was real —who could resist the idea of pizza anytime? These Pizza muffins are a fun play on the pizza snacks we ate as kids! Think of them as mini pizzas or a homemade pizza bites recipe.
Essentially, all you do is divide pizza dough between a muffin tin, add your favorite toppings, and bake. You get all the taste and texture of pizza in a quick and easy recipe!

Ingredients You Need
All you need are a handful of simple real food ingredients you probably already have in your pantry and fridge!
- Gluten-Free Pizza Dough Mix – We love Delallo’s new Gluten-Free Pizza Crust Mix, but any store-bought pizza dough mix will work. If you prefer a thinner crust, use our no-yeast pizza crust recipe instead.
- Pizza Sauce – Use your favorite homemade or store-bought pizza sauce or marinara sauce.
Ingredient Swap: If preferred, tomato sauce will also work. Just be sure to combine it with ¼ teaspoon garlic powder, a pinch of salt, black pepper, and onion powder to taste. Or, use a dash of Italian seasoning. Otherwise, your pizza bites recipe will be a little bland!
- Veggies – Use any of your favorite pizza toppings. Sliced bell peppers, onions, and mushrooms all taste great.
Note: Feel free to include any of your favorite pizza toppings. Black olives, pineapple, oregano, parsley, and fresh basil all make great additions.
- Protein – This is optional but recommended. Uncured pepperoni, cooked ground sausage, or cooked shredded chicken all work well.
- Shredded Cheese – Use mozzarella cheese, parmesan cheese, or your favorite cheese of choice. Opt for dairy-free varieties if needed.
Pro-Tip: For the best results, buy a block of cheese, and grate it yourself. Pre-shredded varieties contain anti-caking agents that prevent them from melting as well!
How to Make This Gluten-Free Pizza Bites Recipe
- Prepare the dough. Prepare the gluten-free pizza dough according to the package instructions. Once the dough is ready to bake, use a floured rolling pin to roll it out into a 12×10 inch rectangle that’s roughly ½ an inch thick.
Note: the texture of each muffin varies depending on the type of gluten-free pizza crust mix you use. We’ve found muffins made with doubt that calls for eggs are a little bit fluffier than other varieties.
- Chill. Transfer the dough to the freezer for ten minutes or the refrigerator for 30 minutes to chill.
- Prepare. While the dough chills, preheat the oven. Then, grease a muffin pan with cooking spray or light olive oil.
- Shape the dough. Use the top of a mason jar or a large round cookie cutter, cut the dough into circles. You should get about ten to twelve!
- Layer. Place the dough in the prepared muffin tray, pressing it down gently. Then, spoon pizza sauce on top. Next, add your veggies and protein, and sprinkle the cheese on top.
- Bake. Transfer the mini pizzas to the oven, and bake until the dough is puffy and golden brown, and the cheese is melted. Enjoy your mini muffins warm!

This gluten-free pizza muffins recipe is an easy snack or appetizer made with gluten-free pizza dough mix and your favorite toppings! Dairy-free option.
- Non-stick cooking spray
- 1 package (6.5 ounces or around 200 grams) gluten free pizza dough mix (for a thinner crispier crust use our no yeast pizza crust – see notes)
- ⅓ to ½ cup pizza sauce or tomato sauce (If using tomato sauce, mix in ¼ teaspoon garlic powder and pinch of salt, black pepper, and onion powder.)
- ⅓ cup to ½ cup sliced/diced bell peppers or other veggies
- Uncured pepperoni, cooked ground sausage, or diced chicken (optional)

- Prepare the gluten free pizza dough according to directions on that package. Once the dough is ready to use and bake, use a floured rolling pin to roll it out into a 12 x 10 inch rectangle about ½ inch thick.

- While the dough is chilling, Preheat the oven to 425 F and spray a muffin pan with cooking oil. Set aside.
- Remove the dough from the fridge. Using the top of a regular mason jar lid or large round cookie cutter, make a circle in the dough and carefully transfer the dough to the prepared muffin pan, laying it flat. Repeat until you have 10-12 muffin cups filled with dough.
