This is a delicious way of making mash that transforms the humble spud into a seriously good dish.
In 2009 I met Auckland chef Blaine Tripp cooking at the Farmgate Café at the English Market in Cork. This is his recipe – not traditional, but delicious!
A simple tasty favourite that can be served hot with potatoes, braised cabbage and a mustard sauce, or cold in sandwiches with pickle.
These are seriously substantial. If you prefer something smaller, reduce the size of your tin and adjust your cooking times.
The combination of goats’ cheese and hazelnuts is just so good. You will never hanker for a classic bacon and egg pie again!
A little planning is needed here, but the satisfying results are well worth the effort. Serve these in small soft rolls, baps or slider buns.
Fresh and full flavoured, this is very popular picnic fare!
You can also add these meatballs to your favourite pasta sauce and serve with pasta and parmesan cheese.
