Let’s hope there will be lots of idyllic days over summer that suggest picnics and eating outdoors. Most of us have a favourite food that is non-negotiable for picnics. In my case it’s my bacon and egg pie, published previously in these pages, that has become everybody’s go-to recipe. This year, however, my salmon and spinach pie may take over the top spot. The secret to its popularity is the flaky pastry and the light, tasty spinach and ricotta filling that complements the salmon.
