That sinking feeling

My mother, and hers, could produce a beautiful sponge: jam and cream sandwiched between airy, sugar-dusted clouds of perfection. I’ve only once attempted this classic confection. Thanks to the judges on MasterChef New Zealand, I now know the technical term for what I produced – “Frisbee-like”. I think it was finalist Paula who earned that accolade for the dismal disc that resulted after she added passionfruit powder (what was she thinking?) to her sponge recipe.
